- Ingredient:
- ☆ 40 g konbu kelp
- ☆ 60 g dried bonito flakes
- ☆ 2000 cc water
☆Basic Dashi Stock☆
Ohayo gozaimasu minasan(Good Morning Everyone). Today’s recipe is “How to make a Basic Dashi Stock”. Very easy to make and always used in making Japanese Cooking Dishes. Let’s get started with what we need to make the Dashi Stock.
Now that we have everything, let’s get into the cooking here.
Direction:
1. Wipe konbu kelp with a cloth to clean.

2. Put the 2000cc water into a pot, add the konbu kelp.and
place it over miedium heat about 10min.

3. Just becomes float up to konbu kelp, remove then.

4. Keep over the heat the liquid, and boiling. When boil, turn a low
the heat, and add the cold water (100cc), down to temperature about 90°

5. Add all the dried bonito flakes all at once, and place
it over medium heat.

6. When the liquid to boil, turn off the heat, and removeing the
foam thoroughly.

7. When the bonito flakes sink to the pot bottom, strain the liquid
through a sieve of fine mesh or paper towel slowly to obtain the
clear soup in a bowl.

* If you can not make the dashi stock, you can use “instant dashi
granules”. you can buy to instant dashi branules, in supermarket.

Hello Andrew, Thank you for comment. So, How to make “simmered Konbu kelp”… First, slice the konbu kelp and chop the bonite flakes, add the 1 tbsp mirin, 2 tbsp sugar, 3 tbsp soy sauce and enough sake to cover the ingredients. Then cook slowly at low heat. It is so match with cooked rice, Please try it.
