☆ Miso Soup with Burdock and Sweet Potato☆(ごぼうとさつまいものみそ汁)

Good Morning Everyone, It’s being a very muggy weekend here in Japan.  Been busy all morning getting my hubby Birthday dinner ready for tonight and helping the kids make his cake also.  Today’s Japanese Cooking Recipe is called Miso Soup with Burdock and Sweet Potato or ごぼうとさつまいものみそ汁 in Japanese.  I had some request for Miso Soup and here is one of many more to come.

Well, let’s see what we need to make our Miso Soup with Burdock and Sweet Potato.

Ingredients:

☆ 130g sweet potato

☆ 50g burdock

☆ 400cc dashi stock

☆ 1 1/2 tbsp miso

☆ 1/2 tbsp black grind sesame

Direction:

1. Cut the sweet potato into half-moon cut and cut the burdock into shaving cut and soak in cold water for about 10 min and drain on a sieve.

2. Pour the dashi stock in a pan, and bring to the boil, add the sweet potato and burdock. When the sweet potato and burdock soften, turn off the heat. Add the miso gradually into the soup, ad the black grind sesame, then into individual bowls.
