☆Hand-Rolled Sushi Balls(手まり寿司) ☆
Good Afternoon Everyone, Another chilly afternoon here in Japan. I forgot to write something before I posted this recipe today. I think it’s the weather..lol Today’s Japanese Cooking Recipe is called Hand-Rolled Sushi Balls or 手まり寿司 in Japanese. This just another way to make enjoy sushi with a different type of look. Easy to make and if the kids help out they will have fun making them. Enjoy
Let get our ingredients ready to make our Hand-Rolled Sushi Balls.
Ingredients:
☆ 4 shrimps
☆ 100g squid ( for sashimi)
☆ 4 dried shiitake mushrooms
A: 150 cc dashi stock
50 cc stock of reconstituted shiitake mushrooms
1 tbsp sugar
1/2 tbsp mirin
1 1/2 tbsp soy sauce
☆ 3 cups cooked sushi rice
Direction:
1. Make the sushi rice.
2. Prepare for shrimps: Boil the shrimps, run it under cold water and drain. Make a score in the belly lengthways and slit it open. Repeat the process for the left and right halves, keeping the same thickness when cutting.
3. Prepare for squid: Shave cut the squid thinly and widely possivle.
4. Reconstitute the dried shiitake mushrooms and thoroughly simmer with “A” Allow it to cool and make diagonal shave cuts.
5. Put 100cc of water and 10cc of vinegar in a bowl to moisten your fingers while using the sushi rice to make small ping-pong- ball size shapes.
6. Place the shrimps in a moistened piece of gauze and place the rice ball on top of the shrimp. Wrap it and gently twist to adjust its shape. ( Plastic wrap may also be used)
7. Hold your index fingeradjust the ingredients. Roll the squid and shiitake mushrooms in the same way.
8. Garnish the shrimps with kinome-sprouts, the squid with parched black sesame and shiitake mushrooms with mustard paste.
*Varieties of Hand-Rolled sushi ball: Besides the ingredients listed above, you may also use FLATFISH, SEA BREAM, HORSE MACKEREL, and VINEGARED MACKEREL.
