Tofu Muffin(豆腐マフィン2種)

Good Morning Everyone, It’s a nice and sunny but chilly Thursday here in Japan. I got the afternoon shift and will be leaving in a bit for work. Today Japanese Style Cooking I have 2 recipes for Tofu Muffins, one is called Dried Sweet Potato and Tofu Muffin and the other is Tofu muffin with Komatsu-na and Cheese. Two very very delicious snack for the family to enjoy.
♪Dried sweet potato and Tofu muffin(干し芋と豆腐マフィン)♪
Ingredients:
☆ 120g Tofu
☆ 2 tbsp vegetable oil
☆ 2 tbsp maple syrup
☆ 100g flour
☆ 1 tbsp baking powder
☆ a pinch of salt
☆ 80g dried sweet potato,cut into 7㎜ square pieces
☆ 1 tbsp black sesame
Direction:
1. Blend the tofu ,vegetable oil, and maple syrup in a food processor.
2. Transfer the “1 ” into a bowl. Sift and mix the flour, salt and baking powder and add the dried sweet potato. Add the black sesame mix briefly.
3. Fill each the muffin mixture into a muffin cup, Place into the oven a 180℃ and bake for about 25min.
Next Muffin~……
♪ Tofu muffin with Komatsu-na and cheese(小松菜とチーズの豆腐マフィン)♪
Ingredients:
☆ 120 g tofu
☆ 1/4 bunch KOMATSU-NA, boil and cut into mince
☆ 50g cheese, cut into 5㎜ square pieces
☆ 2 tbsp vegetable oil
☆ 2 tbsp maple syrup
☆ 100g flour
☆a pinch of salt
☆ 1 tbsp baking powder
Direction:
1. Blend the tofu ,vegetable oil, and maple syrup in a food processor.
2. Transfer “1″ into a bowl, add the KOMATSU-NA, mix briefly and sift and mix the flour, salt, and baking powderand add the cheese mix briefly.
3. Fill each the muffin mixture into muffin cup, Place into the oven a 180℃ and bake for about 25 min.
Both Recipes Serves 4 muffin cups. There you have it.
