Soba Noodles with Tempura☆Soba Noodles with Tempura(天ぷらそば) ☆

Good Afternoon Everyone, It’s New Years Eve here and I’m getting things ready for the New Year for the family.  Hope that everyone have a great and safe New Years Eve and Day.

Todays Japanese Cooking Recipe is called Soba Noodles with Tempura or 天ぷらそば in Japanese.  This is a very easy recipe to make and very tasty, I hope you enjoy this recipe.

Lets get started with what we need to make our Soba Noodles with Tempura Recipe.

Ingredients:

☆ 200g SOBA noodles

☆ 4 tempura, deep-fried shrimps

☆ 1/4 naganegi onion

☆ 3 stalks trefoil

☆ cold water (to be added while boiling soba)

For broth:

☆ 4 cups water

☆ 20 niboshi  small dried sardines

☆ 30g dried bonite flakes

☆ 3 tbsp sake

☆ 3 tbsp soy sauce

☆ 3 tbsp mirin

☆ 1/2 tsp salt

Direction:

1. Remove the head and entrails from the dried sardine, and tear each in half lengthwise. Place the water and dried sardines in a pot, and bring to the boil over a medium heat, after boiling briefly, reduce the heat and skin off the foam, add the sake, soy sauce, mirin, salt and dried bonito flakes, and bring to the boil again to simmer for 20 to 30 sec. Remove from the heat, when all the bonito flakes have set on the bottom of the pot, strain through a cloth.

2. Bring water to the boil in a large pot , place the soba noodles in the pot, and boil while stirring with chopsticks. When the water rolls up to the edges of pot, pour in 1/2 cup water , drain the noodles on a sieve, rub and rinse in running water to eliminate slipperiness and drain again.

3. Bring water to the boil in a pot, plunge the noodles into the boiling water to re-warm, and drain, put the noodles into bowls, and place the deep -fried shrimps on top. Pour on the broth prepared in 1. and garnish with thenaganegi onion, sliced using the edge cut technique and trefoil stalks, cut into 3㎝ lengths.
