Good morning Everyone, Hope that your having a great week so far.  Mines is going great too, been raining for the pass 2 days though.  Looking forward to the end weekend as we are going to visit a friend in the next city to us, we haven’t seen her for a year now.  Glad that we have a chance to get together.

Well todays Japanese Cooking Style is called Spinach Gnocchi with Parmesan Cheese or ほうれん草のニョッキ in Japanese.  This is a great dish for the family and my family just love spinach.  This is very delicious and very easy to make. Enjoy

Let see what we need to make our Spinach Gnocchi with Parmesan Cheese, shall we.

Ingredients:

☆ 300g spinach

☆ 300g ricotta cheese

☆ 150g Parmesan cheese

☆ 130g flour

☆ 2 eggs

☆ nutmeg

☆ salt and pepper

Direction:

1. Boil the spinach, and blend in a food processor, squeeze water out of spinach.

2. Add the eggs, ricotta cheese, parmesan cheese, flour, salt and pepper and nutmeg , mix well with a wooden spoon until dough doesn’t stick to your hand.

3. Roll into bite-size pieces, To cook the gnocchi, bring the water to boil, adding about 2 tsp of salt.

4. Gently add gnocchi to the boiling water and cook for 2-3 in until gnocchi float to surface, and drain the gnocchi and put into a dish, and sprinkle with the parmesan cheese.

5. Bake in oven at 180℃ for 10-15 min until toasted on top.
