Good Morning Everyone, another week has come and gone and the month of February is shortly coming.  Looking forward to a warm weekend here, we have nothing planned yet.  Maybe will will go and do some shopping, cause its payday this weekend. heehee

Todays Japanese Cooking Style is called Simmered Hijiki Seaweed or  ひじきの煮物 in Japanese.  I think that yo can find this is your local Supermarket under the Asian food section.  This is a great side dish for any great main course dish.  Also this is very easy to make and very health to eat. Enjoy

Let see if we have what we need to make our Simmered Hijiki Seaweed dish.

Ingredients:

☆ 30g dried hijiki seaweed

☆ 1/4 carrot

☆ 1 deep fried tofu

☆ 3 tbsp vegetable oil

☆ 300 cc dashi stock

☆ 5 tbsp sugar

☆ 2 tbsp mirin

☆ 50 cc soy sauce

Direction:

1. Soak the hijiki in cold water for about 20 min, and wash and drain. Boil and transfer to a draining basket.

2. Cut the carrot into julienne strips, and cut the deep fried tofu into bite-size pieces. In a pot, preheat the oil, fry the carrot, and add the hijiki and continue to fry, add the deep fried tofu and fry.

3. Add the dashi stock, sugar, and mirin and simmer, when it  comes to a boil, skim off the foam. When the broth is half gone, add the soy sauce and simmer until completely gone.
