Chilled Noodles with Pork☆Chilled Noodles with Pork(冷やし麺) ☆

Good Morning Everyone, hope that you all had a great weekend.  As we start a new week in February, nothing much to report here.  Just alot of snow every where except where we live. lol

Todays Japanese Cooking Style is called Chilled Noodles with Pork or 冷やし麺 in Japanese.  This is a very easy to make meal for the family if you are really not in the mood to eat something heavy.  We usually eat this during the spring season, so we are looking forward to having this dish. Enjoy

Lets see what we need to make our Chilled Noodles with Pork, shall we.

Ingredients:

☆ 450g pork loin

☆ 1 tbsp shokoushu

☆ 1 tsp sesame oil

☆ pinch of salt

☆ 2/3 cup cucumber

☆ 1 cup spring onion

☆ vegetable oil for deep- fry

☆ starch

☆ 4 portion chinese egg noodles

For sesame dressing:

☆ 1/4 cup soy sauce

☆ 1 tbsp sugar

☆ 1tbsp vinegar

☆ 1 tbsp sesame paste or smooth peanut butter

☆ little chicken stock powder with 2 tbsp hot water

Direction:

1. Cut the pork into 8 slice and lightly score each slice on both side. Marinete in the soy sauce, shoukoushu, sesameoil and pinch of salt.

2. Slice the cucumber diagonally and then chop each pieces into thin strips, discarding the watery center, chop the spring onion in half lengthways, slice diagonally into thin julienne and then soak in water to take away any sharpness.

3. Mix together the soy sauce, sugar, vinegar, sesame paste and chicken stock.

4. Heat the oil in a pan, dust the pork with starch and deep-fry until cooked through. Cook the noodles, following the instructions on the packege, plunge into icy water to cool and drain.

5. Divide the noodles among four bowls, arrange the pork on top, garnish with the cucumber and spring onion and pour over the sauce, sprinkle the sesame seed on top, serve with mustard to taste.
