☆Shrimp and Tomato Curry(エビトマトカレー) ☆
Good Morning Everyone, how is everyones day going so far. Today I took the day off, due to a stiff neck for the pass few days. Last night didn’t help much as we went to a Tachinomiya(stand up bar), one of my hubbies favorite places to go drinking. I got to try a new Japanese wine that one my hubbies friends gave him yesterday, so we went to go share with our friends at the bar. This week I will write a review on the Japanese wine.
Well, back to the Cooking. Todays Cooking Japanese Style is called Shrimp and Tomato Curry or エビトマトカレー in Japanese. My family just love when I make this for them, especially my hubby. This is a very delicious dish and very easy to make for the family. Enjoy
Lets see what we need to make our Shrimp and Tomato Curry.
Ingredients:
☆ 8 shrimps
☆ 4 large tomato
☆ 2 eggplants
☆ 1/2 onion
☆ 4 thinly sliced ginger
☆ 1/2 knob garlic
☆ 2 tbsp cumin seed
☆ 2 tbsp curry powder
☆ 2 leaves laurel
☆ salt, pepper
☆ cooked rice
☆ watercress
Direction:
1. Remove the shell of the shrimps and devein, Cut the tomato into 8 equal pieces, cut the eggplant into bite-size pieces, and chop the onion, ginger, and garlic roughly.
2. Heat the olive oil in a pan, add the garlic, cumin seed, and cook briefly, add the shrimps, sprinkle a little salt, and cook. When they are cooked, remove the shrimp from pan, set aside.
3. Add the onion, ginger, eggplants and laurel, stir-fry, add the curry powder, and stir-fry, add the tomatoes salt and pepper simmer for about 10 min over a medium low heat. Return the shrimps and simmer briefly and turn off the heat.
4. Serve with cooked rice and watercress.
